My Saucy Mama Adventure: The King Kamehameha Kahlua Pork Sandwich with Saucy Mama Tropical Chutney

Get a fork. And maybe even a bib. You're gonna need it.

I've been obsessing about Hawaii for several months.  We haven't been on a Hawaiian vacation for about 9 years, and so now my food is starting to reflect on my memories of the Islands.

There won't be a give away for the remainder of my Saucy Mama sauces. I'm not as smart of some of the other girls in The Saucy Mama Recipe Competition!  I opened them up and dipped my finger in ALL of them the second I got them! Every flavor of Saucy Mama sent me to a different place.  And wouldn't you know it?  Hawaii is where I once again stayed!

It didn't help that Bing Crosby's version of  Mele Kalikimaka came up on my playlist this morning as I was driving to the gym.  It was almost as if the Hawaiian Gods were giving me their blessing on this King Sized Sammich.   So, I came home today and I made it.

Traditionally, Kahlua Pork is made outdoors (in Hawaii) in a fire pit, from a whole pig, covered in salt and wrapped in banana leaves.  Well, this is the Healthy, Busy Mom version.  It's easier, healthier, just as delicious and super FUN!  I used a lean pork tenderloin, some Hawaiian Sea Salt, and a little liquid smoke.  If you've got the time, you can cook the meat low and slow over 6 or 8 hours in the crock pot with the same result.  Today, to save time and effort, I threw it all in my pressure cooker.

The chutney is easy, and let me say...the Saucy Mama Orange Habanero Wing Sauce is PERFECT!  It's full of tropical flavor, it's spicy, it's tangy and it's oh so smoooooth.  

My favorite part of this big boy?  Having the juices from the sauce and the meat get that Hawaiian Sweet Bread soft and gooey like stuffing!  HOLY YUM !

You can also make yummy sliders with the smaller Hawaiian sweet bread dinner rolls.  They would be GREAT for a party!  In fact, if this one ends up in front of the judges at The World Food Championships in November, the big guy pictured here will be the centerpiece, and the judges will each get a smaller slider for tasting.  Sounds pretty SAUCY, right?!

It's meaty, it's spicy, it's sweet, it's SAUCY !!!!!  Make it.  Eat it.  That is all.


King Kamehameha Kahlua Pork Sandwich with Saucy Mama Tropical Chutney 

Prep Time: 15 minutes / Cook Time: 45 minutes / Servings: 4 huge, saucy sandwiches

Ingredients:
For the Kahlua Pork:
  • 2 lbs. pork tenderloin
  • 2 tbsp. olive oil
  • 1 tbsp. sea salt 
  • 1 tbsp. liquid smoke (mesquite flavor)
  • 32 oz. low-sodium chicken broth
Steps:
  1. Heat olive oil in the bottom of a pressure cooker on high heat.  
  2. Add the meat and sear for 2-3 minutes on each side, until well browned.
  3. Add the chicken broth and deglaze the bottom of the pressure cooker with a wooden spoon.
  4. Add the liquid smoke and sea salt. Stir until all ingredients are combined and chicken broth comes to a boil.  
  5. Cover and lock the top of the pressure cooker.  Lower the heat to medium when steam begins to whistle and shoot out the top of the pressure cooker.  Continue to cook on medium heat for 30 minutes.  Prepare the chutney while the pork is cooking (see recipe below).
  6. Remove from heat, release the steam and allow the top to cool for a minute before removing it.  Shred the meat with a fork and set aside, keeping it warm until ready to serve.
Ingredients:
For the Saucy Mama Tropical Chutney:

 Steps:
  1. In a medium saucepan, combine the mangos, red bell pepper, scallions and orange juice.  
  2. Season with the allspice and grated ginger.  Stir until combined and bring to a boil.  
  3. Add the Saucy Mama Orange Habanero Wing Sauce. Stir well and lower heat to medium. Allow the sauce to reduce and simmer, about 10 minutes, stirring occasionally.
  4. Stir in the Macadamia nuts and fresh cilantro just before serving.
Ingredients:
To Build the Sandwich:
  • 16 slices of Hawaiian Sweet Bread
  • 1 cup pre-made coleslaw
  • Saucy Mama Tropical Chutney
  • Kahlua Pork
  • Saucy Mama Orange Habanero Wing Sauce
  • 1/4 cup fresh cilantro leaves
Steps:
  1. Place two slices of Hawaiian sweet bread in the center of a serving plate.
  2. Place about 1/2 cup of shredded Kahlua Pork on top of the bread.
  3. Spoon about 1/4 cup of the Spicy Mama Tropical Chutney on top of the pork.
  4. Place another slice of bread on top of the chutney.
  5. Spoon about 1/4 cup of the coleslaw on top of the second slice of bread.
  6. Place another slice of bread on top of the coleslaw.
  7. Place about 1/4 cup of the shredded Kahlua Pork on top of the last slice of bread.
  8. Drizzle about a teaspoon of Saucy Mama Orange Habanero Wing Sauce on top of the meat.
  9. Spoon about 2 tbsp. of Saucy Mama Tropical Chutney on top of the meat and sauce.
  10. Garnish with a few fresh cilantro leaves.
  11. Finish the plate by drizzling an extra bit of the Saucy Mama Orange Habanero Wing Sauce on the plate in front of the sandwich.
  12. Repeat to make three more sandwiches...you've got lots left!
