Easy Ground Turkey Meatloaf

My weeknight meatloaf recipe changes every time I make it. The seasonings and veggies change, but the base of it is always with 90/10 ground turkey.  We've tried it mixed with everything else, hybrids of beef, pork, chicken and...no, not fish!  For us, the moisture and flavor taste best with just the ground turkey.  I'm sharing what I had on hand today, and this is an ideal mixture of what meatloaf should be in our house!

Easy Ground Turkey Meatloaf

Prep Time: 10 minutes / Cook Time: 45 minutes / Servings: 6-8

Ingredients:
Easy Ground Turkey Meatloaf
  • 2 lbs. 90/10 ground turkey
  • 1/2 green bell pepper, chopped
  • 4 scallions, chopped
  • 1 large egg
  • 1/4 cup whole oats
  • 1 tbsp. ketchup
  • 1 tbsp. spicy brown mustard
  • 2 tbsp. Worcestershire sauce
  • 2 tbsp. sweet, dark barbeque sauce
  • 2 tsp. garlic powder
  • 1 tsp. each salt and pepper
  • 3/4 cup marinara sauce
Steps:
  1. Preheat oven to 400 degrees.
  2. Spray a loaf pan with non-stick cooking spray.
  3. In a large mixing bowl, combine all ingredients, except for the marinara sauce.  Mix well with your hands until everything is combined.
  4. Transfer the mixture to the sprayed loaf pan.  Shape the loaf so that it's higher in the center and lower on the sides (like a football).  
  5. Bake in the oven at 400 degrees for about 35-40 minutes.  Remove from heat, pour the marinara sauce evenly over the top and return to the oven for an additional 5 minutes.  Internal temperature of the meatloaf should read 165 degrees.
  6. Remove from the oven and allow to cool for about 5-10 minutes before cutting and serving.
